Mixed Veggie Bowl

Theres nothing better then giving your body exactly what it needs. For me that means eating as many fresh veggies as I can everyday!

Eating more vegetables  will do some serious wonders for your hair, skin, nails, health and general well being.

But I’ll be the first to admit it theres nothing exciting about your standard garden salad.

So my healthy trick is to combine all the veggies I love along with other goodies and create my own mixed veggie bowl.

This veggie bowl I’ve whipped up has;

  • Roasted Sweet Potato & Carrots (Coconut Oil)
  • Sautéed Onions, Chilli and Corn
  • Grilled Eggplant
  • Chickpeas
  • Spinach Leaves
  • Half an Avocado

It may seem like a lot but most of these items were just in my fridge at home. Its a great way to use up all your left over vegetables and get creative!
